More Creative Leftovers

I've been trying to think of ideas all day for using up my container full of leftover whole wheat spaghetti noodles that I told you about yesterday. Since we just ate Spaghetti on Friday night, I wanted something different. Finally, I came up with this creation:





Italian Chicken and Pasta Skillet Dinner


Saute some chopped onion, chopped green pepper and minced garlic in olive oil.
Stir in 2 cans of diced tomatoes. (I used some DelMonte diced tomatoes with green pepper and onion that I had recently purchased B1G1F.)
Add chopped, cooked chicken and cooked spaghetti noodles (or other pasta).
Add a little Italian seasoning.
Simmer on low while you make a tossed salad.
Right before serving, stir in some grated Parmesan or Italian 5 cheese (optional).

This was really incredibly yummy!!! I think I might even make it again some time! This recipe illustrates the fact that Necessity is the mother of Creativity.
