Snack Time!

I promised my daughter's friend, Emily, that I would post these recipes, but didn't get around to it yesterday.

These are two treats that our family enjoys. They are easy to make, too!


(We call these "snitcheroos" -- because it's so hard to leave them alone!)


1 cup white sugar
1 cup light corn syrup
1 cup peanut butter
6 cups crispy rice cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips


1. Spray a 9x13 inch baking pan with Pam.
2. In a saucepan over medium heat, combine the sugar and corn syrup, and bring to a rolling boil.
3. Remove from heat, and stir in peanut butter.
4. Mix in the rice cereal until evenly coated.
5. Press the mixture into the prepared pan.
6. In a glass bowl in the microwave, melt the chocolate and butterscotch chips, stirring every 30 seconds, until smooth and well blended.
7. Spread over the top of the bars. Let set up slightly, and then cut into bars. Then, chill until set and serve.

Granola Bars


1 cup butter
2 cups brown sugar
4 Tablespoons honey
1 teaspoon vanilla
2 eggs

2 cups flour (all-purpose or whole wheat)
1 teaspoon baking powder
1/2 teaspoon salt
3 cups quick oats
2 1/2 cups crispy rice cereal
3 cups of any of the following: nuts, raisins, chocolate chips, dates, coconut, sunflower seeds


1. Mix together the first five ingredients.
2. Then add the dry ingredients and mix well.
3. Stir in chocolate chips, nuts, etc. as desired.
4. Press in jelly roll pan and bake at 350 degrees for 20 or 30 minutes, until golden brown. Don't overbake, or they will be too dry and crumbly.
5. Store in airtight container.
