
I wanted to share the recipe for my birthday cake with y'all. This is my Mom's recipe, and is a long-time family favorite. More often than not, it has been my birthday choice. It is the perfect cake for fall -- especially if you have a bunch of apples at your disposal.
Apple Chip Cake
Ingredients:
4 cups peeled and chipped apples
2 cups granulated sugar
3/4 cup oil
2 eggs, beaten
2 tsp vanilla
3 cups flour
2 tsp baking soda
1 tsp salt
1 cup chopped walnuts
1/2 cup coconut
Topping:
2 TBSP butter
2 TBSP flour
1 TBSP cinnamon
3/4 cup brown sugar
Directions:
1. Pour sugar over chipped apples and stir. Let Stand for One Hour!!!
2. Add oil, beaten eggs, and vanilla.
3. Mix well.
4. Mix together flour, salt and baking soda and add to apple mixture.
5. Add walnuts and coconut and mix well.
6. Pour into 9x13 baking dish.
7. For topping, mix together with hands:
- 2 TBSP butter
- 2 TBSP flour
- 3/4 cup brown sugar
- 1 TBSP cinnamon
9. Bake at 350 degrees for 35-45 minutes or until toothpick comes out clean.
10. For best results, serve with a scoop of vanilla ice cream!

Glad you liked your cake....it is good to get additional fruit in our diet where we can! I actually prefer to sneak a few vegies in my cake...carrot cake is my favorite! You should make apple bread too, as it is very similar to your cake recipe. I also love to make applesauce. Even though fall is not my favorite time of year, I do enjoy the fresh apples.....and all the great recipes!
What?? You don't like fall?? It is my favorite season! I guess you just don't like the foreshadowing of the winter to come; whereas, I so enjoy a break from the intense heat and humidity!!
