What's for Supper?

In spite of reading about the merits of menu planning repeatedly on many of my favorite blogs, and even though I have, in days gone by, planned marvelous monthy menus, and even dabbled in once-a-month cooking, I seem to be unable to put together a workable menu plan at this point in my life.

It may be due to a lack of time, an inability to really focus on the task long enough to gather my thoughts and pull a menu together, indecisiveness over what I really want to prepare and eat in the days and weeks ahead, perfectionism, or an uncertainty over what foods I should include in my daily diet. (To eat carbs or not to eat carbs is the question??) I think all of these factors have me immobolized and unable to commit a menu plan to paper!

So, I usually approach the week with a few meals in mind, which are often based on the weekly sales ads, and then I just wing it for the rest! This requires a lot of flexibility and creativity, and means I wake up most days with the burning question on my mind -- "What's for Supper??" I'm sometimes able to answer this question early in the day, while sometimes it is supper time before I know the answer!

I know this is not the ideal situation -- but I'm just being honest! This is where I am right now!

So, today I wrestled with the age old question once again, and finally came up with this creation for supper. I took some leftover whole wheat spaghetti noodles from last night and combined them with some cooked fajita chicken strips. Then, I sauteed some strips of onion, colored bell peppers, and zucchini in olive oil and McCormick Fajita seasoning. I love how colorful the veggies looked while cooking.

Then, I tossed it all together in a big bowl and served with Parmesan cheese sprinkled on top.

I received some positive feedback from my hungry crew. Now, all I need is a creative name for my tasty creation. Have any suggestions?? I've thought of Chicken Fajita Spaghetti, Chicken Fajetti, and Chicken Spajita!!! :) Obviously, I need help!! Please leave me a comment and let me know what you would name this dish!

Looks great! You did better than I at coming up with a last minute meal!! Because Burlin wasn't coming home for supper, we just made pancakes and eggs-compliments of Abigail and Ben! Your meal was much more creative and healthy!

I am struggling in that area too. I need to work on writing down my meal plans each week...that way the girls would know how to better help in that area when needed! They are not "mind readers"!

I'm having the same problem. We eat early and I teach piano until late in the afternoon. A friend of mine recently told me about e-meals.com and I'm going to try that out. Your "spaghetti" looks wonderful!

Yum!! That looks great. I don't have a creative name for you, but looks good.

I know what you mean about meal planning. for years I struggled with ALL the same things you mentioned in your post. Last year the Lord pulled a workable one together that we are still using. This is a major record. I think 16 months using the same menu plan is amazing for us. I would spend hours and days planning, typing, and making charts only to use it for about 2 1/2 weeks! I have to honestly say it was God who pulled it together for me. Each of our families are so different there is no one way to do it, I am convinced.

Hi Elizabeth, I checked my blog, I don't really have the 'how I came to this menu plan' just examples of mine.
