What's for Supper??

What's for supper at your house??

It is very cool, breezy and autumn-like here today . . . finally!   But who knows how long it will last?!!?   It may be back up into the 80s next week, so I've decided to take advantage of the cooler temps while I can, by making all of my fall favorites!~

On the menu for tonight is Black Bean Chili and Homemade Bread!  (I couldn't wait for supper, and served myself a bowl for lunch!)

I think I've posted this recipe before, back in the early days of my blog, but here it goes again:

Black Bean Chili

2 Tablespoons olive oil
1 cup chopped onion
1 cup chopped orange or yellow bell pepper
2 teaspoons minced garlic
2 pounds lean ground beef
6 (15 oz.) cans black beans, undrained
4 (14.5 oz.) cans diced tomatoes or crushed tomatoes or combination of both
1 to 2 Tablespoons chili powder
2 Tablespoons dried oregano
2 Tablespoons dried basil
2 Tablespoons cumin
2 Tablespoons red wine vinegar

Saute the onion, garlic and bell pepper in olive oil. Add the lean ground beef and cook, stirring often, until browned. Add all other ingredients. Stir well. Bring to a boil and then let simmer on low, covered, for at least an hour or more, until flavors are well blended. Flavor is even better the next day!

Serve with a dollop of sour cream or a pile of grated cheddar on top.

The birds are enjoying their food, too!  We love watching this cardinal on the bird feeder right outside of the Big picture window in our breakfast area.  I just looked up while typing this -- and there it is again -- enjoying a snack!!

I love a good pot of chili! :)
This recipe has a little too many black beans for my family, but I hope you enjoy it!

When we lived in Charleston, we had a cardinal family behind our apartment...Amber used to love watching them!

We don't see many here, but we no longer have a good tree branch to hang a feeder. We feed peanuts or sunflower seeds to our squirrel family! That provides occasional entertainment as it tortures the cat! :)

I love chili! And now that it's chilly, my husband will "let" me fix chili. ;) Only he doesn't think chili should have black beans in it (he has some pretty strong feelings about chili...go figure) so when I fixed it a couple of nights ago, with only black beans in the house, I told him it was "I can't believe it's not chili." That chili was renamed several times before the meal was over, but everyone who ate it enjoyed it. :)
