31 Days of Pumpkin: Day 1

Yes They're All Ours:31 Days

I've decided to try something crazy -- I'm going to join Nester's 31 Days of ______ challenge and commit to blogging 31 days in a row on the same topic!  It was difficult trying to decide what topic to choose -- but I finally decided to blog about Pumpkin!  Yes, 31 days in a row about Pumpkin!!!  Should be interesting!  ;) 

Today is October 1st, which happens to not only be the first day of the challenge, but also my son, Christopher's, 16th birthday!!  It also marks our one year anniversary in this house!  I'm super excited because the weather suddenly turned cool and fall-like, so we opened the windows this morning and I'm loving the fresh air blowing into the house!  Fall weather makes me so Enthusiastic and Energetic!  I just love Autumn!  :)

So, in honor of the fall weather and Christopher's birthday (and the 31 Day Challenge!), I got up early and made a batch of Pumpkin Pancakes.  I wanted them ready for Joe to eat before he left to take the SAT.  He was pretty pumped when he saw what I had made for breakfast!  (I hope that translates into a great score!)   :)

Here is the recipe:

Pumpkin Pancakes

Combine in a large bowl:

4 cups flour (all-purpose or whole wheat)
1/4 cup brown sugar (or healthy sweetener)
1 1/2 TBSP baking powder
2 tsp baking soda
2 tsp ground allspice
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp salt

In a separate bowl, stir together with a wire whisk:

3 cups milk
2 cups pumpkin (1 can)
2 eggs
1/4 cup melted coconut oil or butter
1/4 cup apple cider vinegar

Add the liquid ingredients to the dry ingredients and mix well.  Add water or milk, if needed, to reach the desired consistency.

Pour 1/4 cup at a time on griddle preheated to 350 degrees.  When first side is done, flip and cook the other side.  Remove to serving platter.

Serve hot with butter, maple syrup or pumpkin syrup (recipe coming tomorrow!).

These are Delicious and make your house smell heavenly!  No need to wake up the children -- the smell will seep into their bedrooms and send them scurrying to the kitchen!  ;)

Delicious! Made them for our Saturday morning breakfast served with canned pears, warmed maple syrup, whipped cream and a dash of Tupperware's cinnamon vanilla, and they were heavenly! I am really looking forward to your month of pumpkin. Thanks!

we tried these pancakes a few days ago and they are WONDERFUL!! They are much better than the old recipe I had for pumpkin pancakes. :) thanks!!

Wow! I see that pumpkin pancakes are very popular this time of year. Has anyone ever tried sweet potato pancakes? Maybe I'll be the first to try it.
