31 Days of Pumpkin: Day 12

Last week I found a recipe for Pumpkin Waffles that sounded like a winner!  It looked like it would be both nutritious and delicious.  Thinking these waffles would become a new family favorite, I eagerly made them for brunch one morning.  It was an Epic Fail!!!   The waffles stuck hopelessly in my waffle maker, and I had to dig them out with a fork!  After the fourth try, I decided to drop back and punt, hoping to recover some yardage with Pumpkin Pancakes!  Would you believe the batter stuck on my pancake griddle, too???  (Maybe it was the molasses??)  Eventually, I gave up and dumped the whole bowl of batter down the drain!  What a discouraging morning!!!   :(









Still smarting from this defeat, it took a great deal of courage for me to attempt another pumpkin waffle recipe!  However, I am happy to report that I scored a Touchdown with this winning recipe!!







Belgian Pumpkin Waffles

Ingredients:

1/2 cup Pumpkin Puree (canned or fresh)
2 cups all-purpose flour
1/4 cup brown sugar
1 Tbsp corn starch (non GMO recommended)
1 Tbsp Pumpkin Pie spice
1 1/2 cups whole milk
2 eggs
1 tsp vanilla extract


Directions:

Pre-heat waffle iron.

Thoroughly whisk flour, brown sugar, cornstarch and spice together.  

In a separate bowl, beat together eggs, milk, pumpkin puree and vanilla.

Add the liquid ingredients to the dry ingredients, whisking until smooth.

Cook waffles until golden brown.  Keep warm in oven until ready to serve.

Serve with butter, maple syrup, or whipped cream!












I will definitely be making these again!!  Perhaps for a fun family breakfast on Thanksgiving morn??

Looks delicious! :) I will have to try these on Saturday...our "big breakfast" day!

So sorry about the first try! It is so frustrating when the waffles stick in the iron....even worse is the clean up afterward! I'm glad you didn't give up but persevered to victory! :)

Good for you for not giving up! I'm pretty sure I would have run screaming after the first failed attempt! :) They look yummy!
