31 Days of Pumpkin: Day 19

Yes They're All Ours:31 Days


I searched the internet for a cake recipe using pumpkin, and since we love that yummy pumpkin/chocolate chip combo, I decided to try this recipe:

Pumpkin Chocolate Chip Cake

Ingredients:
15 oz. pumpkin puree (fresh or canned)
3 eggs
2 cups all-purpose flour
2 cups sugar
1/2 cup melted butter or coconut oil
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
12 oz. (2 cups) chocolate chips

Directions:
Pre-heat oven to 350 degrees F.
Grease and flour a tube pan.
Add all ingredients, except the chocolate chips, into a mixing bowl.  Mix well.
Blend in chocolate chips gently.
Pour mixture into the greased and floured tube pan.
Bake for one hour at 350 degrees F.
Remove from pan to wire rack and allow to cool before serving.







This cake was easy to throw together and tasted good, but it seemed a bit heavy or dense, especially with all those chocolate chips in it.  So, I'm not sure I would make it again; however, I wouldn't exactly call it a failure, since my cake platter is empty!!  

Note:  Joe recommends making it again, using the mini chocolate chips.

I don't think I will try this one. Actually, my family is divided on pumpkin .... so I don't try too many recipes with that ingredient! I think I would prefer the cupcakes (or maybe it was muffins?) to the cake!

I hope you are enjoying your attempt at 31 days of pumpkin! It has been interesting for sure, and I have printed many new recipes for my notebooks! :)
