31 Days of Pumpkin: Day 3

Today, I'm shining the spotlight on my favorite Pumpkin dessert -- Pumpkin Pound Cake!! 

I absolutely love this cake!  It is so moist and flavorful, mixes up quickly, and pairs well with a cup of coffee for a simple, but elegant, fall dessert!

My Aunt Terri adds mini chocolate chips to the batter and then drizzles the cake with a cream cheese glaze for an extra special treat!  So, feel free to personalize this recipe to your heart's content!  

If you are a regular reader of my blog, you will recognize this recipe, as I've certainly raved about it before, but I'm going to share it again for my 31 Days readers.







Pumpkin Pound Cake

3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 teaspoon salt
3 cups white sugar
1 cup melted butter or coconut oil
4 eggs
1 (15-ounce) can pumpkin puree  (I use Libby's solid pack pumpkin)
1/2 cup milk

Directions:

Preheat oven to 350 degrees F.   Grease and flour a Bundt or Tube pan (or spray well with non-stick baking spray.)

Mix the flour, baking soda, baking powder, salt, and spices. Set aside.

In a large bowl, beat together sugar and butter (or coconut oil). Add eggs one at a time beating thoroughly after each one. Mix in pumpkin. Scrape bowl often to make sure it is mixed well.

Stir in flour mixture alternately with milk.  Mix well, scraping bowl. Pour batter into prepared pan.

Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into center comes out clean.  To insure a moist cake, place about 1 cup of water in oven-proof dish on oven rack while the cake bakes.

When cool, transfer to cake plate and sprinkle with confectioner's sugar.

I am not going to follow in your footsteps and bake all these 31 recipes...........I would gain at least 31 pounds for sure! :)

I agree with Terri on the pound cake...needs an icing (glaze)! Everything tastes better with icing! I'm not sure about the chocolate chips yet...may have to try it when the girls are home on break!

This looks delicious! And since I think even the best is better with chocolate, I'm going to try it with chocolate chips...and the glaze! This is going on my to-bake list.
