31 Days of Pumpkin: Day 4

Yes They're All Ours:31 Days



Pumpkin chocolate chip muffins have been a family favorite for several years now.  We make a couple different recipes, but this version is so easy it is ridiculous!  What makes this recipe so simple is that it uses only a Spice cake mix, a can of pumpkin, a little apple sauce or juice, and mini chocolate chips.




Just mix together the spice cake mix, the can of pumpkin, and a little apple sauce or apple juice to thin the batter some.  Stir in 1/2 bag mini chocolate chips and you are done!


I prefer making mini muffins and this recipe will make 4 pans of mini muffins or 2 pans of regular-sized muffins.  I bake the smaller muffins for about 15 to 17 minutes at 350 degrees F and the larger muffins for about 20 to 22 minutes.





Do you notice how round and uniform my muffins are?  I'll let you in on my secret -- I use a medium-sized cookie scoop to quickly and easily scoop out my batter, which makes picture-perfect muffins every time!





Here are the muffins, warm from the oven and ready to melt in your mouth!  I had to hurry and take a picture, because, believe me, they disappear fast!!

Mmmm, they look perfect! I'm going to have to go out and buy a cake mix I see. I love pumpkin muffins. The ones from the coffee shops taste like moist cake and I could never duplicate the texture at home. I think I may have found my answer, and I am heading into to town right now. :)

One question, what size is the can of pumpkin? I have the same brand of pumpkin here in the 29oz can, but it comes in different sizes.
