31 Days of Pumpkin: Day 5

Yes They're All Ours:31 Days


Pumpkin Bread is definitely a family favorite and probably one of the more common uses for pumpkin.

This recipe came from Mum Mum, who was Alan's mother.  She made this every year for holiday meals, and no Thanksgiving or Christmas dinner table would have been complete without it!  When it became a bit too much for her to make it in her latter years, one of the children (usually Josh) would mix it up, while she coached him every step of the way!  ;)

I made a batch yesterday and received the highest of compliments -- "Mom, your pumpkin bread is just as good as Mum Mum's!!"  :)

So, here is your chance to make some of Mum Mum's famous pumpkin bread!



Pumpkin Bread

3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoon salt
3 teaspoons cinnamon
3 teaspoons nutmeg
1 cup oil (I used melted coconut oil)
4 eggs
2/3 cup water
2 cups canned pumpkin (1 15-oz. can)
3 cups sugar

Sift together the dry ingredients.  (Well, I must confess that I did not take the time to sift!)

Make a hole in dry ingredients and add remaining ingredients in the hole.

Mix well until thoroughly combined, scraping bowl frequently with a rubber spatula.

Pour batter into 2 or 3 medium-sized bread pans, that have been greased and floured.  (I generally just spray my pans with Pam.) You can also bake in mini-sized bread pans, which is what I did yesterday.

Bake at 350 degrees F for one hour, or until a toothpick inserted in center comes out clean.

Chill before serving for best flavor.

I already made this one!!! I make this a lot actually....more in the fall, but I have also been known to make it any time of year! (It is like dad and sweet potato casserole..why only enjoy it during the holiday season?)

I will have to buy a bigger dessert notebook soon! :)
