31 Days of Pumpkin: Day 6

Are you ready for something a little different than pumpkin muffins or pumpkin bread?!?  You'll be amazed at some of the unusual recipes I'm collecting and planning to try this month!  I never knew the humble pumpkin could be so versatile!

Today I'm going to share a deliciously different dessert using pumpkin.  My family gave it a thumbs up!  But, let me warn you -- it's pretty rich!

Pumpkin Mousse

1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 can (15 ounces) solid-pack pumpkin
1 package (3.4 ounces) instant vanilla pudding mix
2 teaspoons pumpkin pie spice
1 cup cold milk
2 or 3 cups whipped cream (homemade or purchased)
gingersnaps as optional garnish

In a large mixing bowl, beat cream cheese and sugar until smooth.  Beat in canned pumpkin.  Add pudding mix and pumpkin pie spice and mix until well blended, scraping the bowl as needed.  Gradually beat in milk.  Fold in whipped cream.

Scoop 1/2 cup pumpkin mousse into serving dishes.  Spoon a dollop of whipped cream on top.  Chill until ready to serve.  

Yield:  8 servings

I think I might try this for Thanksgiving dinner on Monday (I'm Canadian). Can you tell me what solid-pack pumpkin is? I've only ever seen either pumpkin pie filling or cans of pumpkin.

Solid-pack pumpkin is just the canned pumpkin. I'm not sure why it is worded differently in different recipes. I see recipes that call for canned pumpkin, solid-pack pumpkin, and pumpkin puree . . . .and I think it is all basically the same thing.
