31 Days of Pumpkin: Day 7

Yes They're All Ours:31 Days

I bet you think all pumpkin recipes are sweet treats??  Actually, that's not true!  Everyone I know has been sending me pumpkin recipes, (hmm . . .wonder why???)  and although most of them are yummy baked goods, I've been getting some savory main dish recipes, too!

I astonished my family this week by making Pumpkin Sloppy Joes for supper one night!!  They thought I was crazy . . . but it was actually pretty good!  You really couldn't even taste the pumpkin!

My inspiration came from this recipe, which I adapted a bit and renamed to my liking!

Are you adventurous enough to try Pumpkin Sloppy Joes???  If so, here's the recipe!!  :)

1 1/2 pounds ground beef
1 onion, chopped
1 15-oz. can tomato sauce
1/2 cup canned pumpkin
1 teaspoon chili powder
1 teaspoon salt
1/2 to 1 teaspoon pumpkin pie spice
1/4 teaspoon ground pepper

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.  Add tomato sauce, pumpkin and seasonings.  Bring to a boil.  Reduce heat; cover and simmer for 1 hour or until thickened.  Serve on buns.  Yield:  6 to 8 servings.

Let me know if you give this a try!!

I think pumpkin was meant to be in desserts....not a Sloppy Joe! :) But, I understand as 31 days of desserts may taste yummy, but it could have some negative effects!

I don't think I have the courage to try pumpkin sloppy joes!
Are you going to post a pumpkin soup? The one I make with curry is my absolute favorite! If you add coconut milk instead of regular milk, it's even better.

It's interesting that where I live pumpkin is almost always used in savoury dishes and rarely as a dessert. The first time we had pumpkin pies for Thanksgiving, DH chose to eat them with the main meal because to him they were a vegetable - not a dessert. While the thought of pumpkin and choc chips together is going to take some getting used to, some of your other recipes look really interesting. And I love the idea of blogging about something for 30 days.

Yet another adventurous dish. You are certainly expanding my thinking on this vegetable.

Definitely going to try. I may add a bit of chipotle (powdered or canned).
