31 Days of Pumpkin: Day 13

Yes They're All Ours:31 Days



Have you been enjoying the 31 Days of Pumpkin?  I hope so!  I've been having fun trying lots of new recipes and revisiting old favorites!  I hope you've found time to try a recipe or two!  Please let me know if you do!  


Have you been following any of the other 31 Day blogs???  I admit that I haven't had time to check out more than a handful, and with nearly 750 participants, it's clearly a challenge just deciding which ones to visit!  I did discover another 31 day blogger focusing on pumpkins, and if you enjoy creative ideas for decorating with pumpkins, you will definitely want to stop by her blog for some inspiration!!!  








Today I'm going to share a recipe that has been a family favorite for about ten years!  Back when we lived in the Upstate of South Carolina, my friend, Sonya, brought some of these over for us to try one day, and it was "love at first bite!"  Now, I'll be honest -- if she had just given me the recipe, rather than a sample, I probably wouldn't have given it a try.  At that point in my life, I just didn't know that pumpkin and chocolate chips are a winning combination!!   Some things you just have to learn through experience!  ;)




Pumpkin Chocolate Chip Muffins

Ingredients:

3 1/3 cups flour
2 cups sugar
2 teaspoons pumpkin pie spice
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups pumpkin (1 15-oz. can)
1 cup butter, melted (2 sticks)
4 eggs
12 oz. chocolate chips

Directions:

Pre-heat oven to 350 degrees.  Grease muffin cups or line with muffin papers.

Mix dry ingredients in a small bowl and set aside.

Mix pumpkin, melted butter, and eggs in mixing bowl.

Gradually mix dry ingredients into pumpkin mixture until well blended.  Stir in chocolate chips.

Scoop into tins and bake about 20 minutes at 350 degrees.  Cool on cooling rack.  








These muffins have been Joe's favorite for a long time!  So, he was quite happy to come home and discover these muffins, warm and delicious, ready to be sampled!

These look great......again! I keep copying these great recipes into my folder, but haven't tried any yet! However, I am thinking about some pumpkin bread today.........

From Joe's picture it looks like these are a great compliment to a cup of hot coffee....with pumpkin pie creamer of course! :)

I can personally blame at least 20 pounds of my total weight on these muffins! :) Thanks for sharing! What a nice way to commemorate October!
