What's Cooking? {Sauteed Cabbage}

One of my readers recently requested my Sauteed Cabbage recipe, which some of you will recall was a big hit when I made dinner for 30 Chinese government officials!!!  

Unfortunately, I don't have an exact recipe to share.  I just created it one day, and even my cabbage-haters liked it, so I kept making it.  

This is what I do:

First, I fry up a pound or so of bacon in my electric skillet.

While my bacon is cooking, I coarsely chop a large head of cabbage. 

Then, I remove the bacon to a paper-towel lined plate to cool, and saute/steam the cabbage in the bacon grease with the lid on, stirring often.  Sometimes I add a little bit of water, if it seems to dry.  On occasion, I have also thrown in some chopped onion.

I season with salt and pepper to taste.

While the cabbage is cooking, I crumble my bacon and guard it from "snitchers!"  ;)

When the cabbage reaches desired doneness, I toss the cabbage with the bacon and serve.  This is excellent served along side grilled or baked chicken, meatloaf, etc.

My children learned from the Chinese to eat it sprinkled with hot sauce.  (Actually, it would be more accurate to say doused with hot sauce!)

I'm going to try this. I just found out my son will eat anything if it has bacon in it.

I almost bought him a bookmark with a picture of bacon on it thinking it might make him read more...

My dad made us a lot of cooked cabbage growing up, I wasn't too big of a fan, but this looks delicious!
