What's Cooking? {Blue Ribbon Blueberry Crunch}





We went blueberry picking again yesterday and collected another 20 quarts!  (The owner knew it was getting down to the end of the season and the berries were harder to find, so he said we could keep all that we picked!  Hooray!)  It is amazing how many we got with everyone picking together!  


Kristi took home 3 quarts for her and Josh and to share with her Mom and Dad. Luke's friend, Jase returned home yesterday after visiting with us for ten days, and we sent him home with 2 quarts to share with his family.  


That still leaves us with 15 delicious quarts!  It may sound like a lot -- but when you freeze some, cook with some, share some, and nibble some -- they disappear quickly!  You can't imagine how quickly a quart of blueberries sitting out on the kitchen island can disappear!  :)


I've been trying some new recipes with the blueberries.  Here is one recipe that I found somewhere and tweaked quite a bit.  It was delicious!




Blue Ribbon Blueberry Crunch


Crust:


1/2 cup all-purpose flour
1/2 cup butter, softened
1/2 cup white sugar
1 1/2 cups chopped pecans


Mix together well.  Spread into bottom of 9x13 inch baking pan.  Bake at 350 degrees F for 20 minutes.  Remove and let cool; then spread with filling.






Filling:


1/2 cup white sugar
8 oz. cream cheese, softened
8 oz. whipping cream, whipped


Cream together and spread cream cheese mixture over cooled crust.


Topping:


1 cup sugar
2 TBSP flour
3 cups blueberries, fresh or frozen


Add the sugar and flour to the blueberries; stir well.  Cook over medium heat until thick.  Cool.  Spoon blueberry mixture over the cream cheese mixture.


Chill well and serve.

Yummmmm, my grandma makes that but puts a layer of cool whip over the cream cheese layer, before the blueberries. SO good!

Hi Katie,

Sounds good, but I have this thing against cool whip! ;) Once I started reading labels more and saw what cool whip was made out of, it has never tasted as good to me! So, I specifically made this recipe, because I didn't need to use cool whip! LOL!
