What's Cooking? Raw Apple Muffins


A really sweet blogging friend brought me back a big bag of Golden Delicious apples from the north Georgia mountains last week!  :)  I used my golden treasure to make this Caramel Apple Coffee Cake, our family favorite Apple Crunch, and these yummy Raw Apple Muffins.  





Raw Apple Muffins

Ingredients:

4 cups peeled and diced apples
1 cup raw sugar
2 eggs, lightly beaten
1/2 cup coconut oil
2 teaspoons vanilla extract
2 cups whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup chopped walnuts or pecans

Directions:

  • Preheat oven to 325 degrees F.  Spray 2 muffin pans with non-stick cooking spray.
  • In a mixing bowl, mix the apples, sugar, eggs, coconut oil and vanilla.
  • In smaller bowl, mix flour, soda, cinnamon and salt.
  • Add dry ingredients to the wet ingredients.  Stir by hand (or mix on low) until mixed well, scraping bowl as needed.
  • Add chopped nuts and mix together.
  • Bake for about 25 minutes. Remove muffins to cooling rack.
  • yield: about 2 dozen

I love muffins. And now that I cannot have gluten I am starting to border on a crazed obsession with them! These look moist and yummy.
