What's Cooking? Southern Sweet Tea

If you are from the Deep South . . . or are a southerner at heart . . . it's very likely that you love you some good sweet tea!  ;)  

If so, you will love this recipe for Sweet Tea Concentrate.  (If you are from the North . . . or on a diet . . . . you can adjust the sugar accordingly!)  ;)  

Actually, some southerners will not find this tea to be sweet enough -- but it's perfect for our family.  Sweet, but not too sweet.  :)





Sweet Tea Concentrate

Ingredients:

12 cups cold water
24 Luzianne family size tea bags
8 cups sugar
1/2 teaspoon baking soda

Directions:

Bring 12 cups of water to a boil.  Remove from heat.  (Never let tea boil or it will be bitter!) 
Add 24 family size tea bags.  Cover and let steep for 30 minutes or longer.  
Remove tea bags, gently squeezing out tea.  
Add baking soda and sugar.  Stir until dissolved.
Pour into a gallon pitcher (or recycled milk jug) and add enough cold water to make a gallon.  Label clearly as concentrate!  :)    
Store in the refrigerator up to 3 weeks.

To make 1 gallon of tea -- pour 3 cups concentrate into a gallon pitcher and add water to top.  Makes 1 gallon of delicious sweet tea.

Recipe yields 5 gallons of sweet tea with a bit left over.

Can you freeze the concentrate?

Sure! I think it would be awesome to freeze it in appropriate portions ready to make a gallon or half-gallon of tea. Then you could just drop the frozen block in your pitcher and add water, stirring to thaw and mix! Great idea! :)

It's a "secret ingredient" that removes any bitterness from the tea!
