Pumpkin Delights Recipe Series featuring Pumpkin Pancakes!

My friend, Savannah, of Hammock Tracks is hosting a recipe exchange today featuring my favorite fall food -- pumpkin!  My mouth is watering just thinking about it!   Of course, I was eager to join this link-up!  You may remember how much fun I had last year with my 31 Days of Pumpkin

Because of that series, I've apparently earned the reputation of the "Pumpkin Lady," because people continue to send me their favorite pumpkin recipes to try!!  ;)

Monday was Christopher's birthday. I wanted to make him a special breakfast, so of course, I turned to my popular pumpkin pancakes, much to his delight!  :) They were so yummy and we decided to start a new autumn tradition -- from now on, we will have our first pumpkin pancakes of the fall on his birthday, October 1st! 

Here's the recipe, if you missed it last year, so you can enjoy them, too!



Pumpkin Pancakes

Combine in a large bowl:

4 cups flour (all-purpose or whole wheat)
1/4 cup brown sugar (or healthy sweetener)
1 1/2 TBSP baking powder
2 tsp baking soda
2 tsp ground allspice
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp salt

In a separate bowl, stir together with a wire whisk:

3 cups milk
2 cups pumpkin (1 can)
2 eggs
1/4 cup melted coconut oil or butter
1/4 cup apple cider vinegar

Add the liquid ingredients to the dry ingredients and mix well.  Add water or milk, if needed, to reach the desired consistency.

Pour 1/4 cup at a time on griddle preheated to 350 degrees.  When first side is done, flip and cook the other side.  Remove to serving platter.

Serve hot with butter, maple syrup or pumpkin syrup.


Pumpkin Syrup:
 
Combine:
1 stick butter
1 cup maple syrup
1 cup pumpkin puree
1 tsp cinnamon
Stir with a wire whisk.  
You can either warm this up on the stovetop or in the microwave.  Serve warm over pumpkin pancakes.   Yummy!  :)


These are Delicious and make your house smell heavenly!  No need to wake up the children -- the smell will seep into their bedrooms and send them scurrying to the kitchen!  ;)

Tried the pumpkin syrup on regular waffles and it was SOOOOOOOOO yummy!!! Thank you so much for sharing such a great and easy recipe!
