Seafood Chowder




I promised to post my yummy seafood chowder recipe from New Year's Eve. That gave me a good excuse to make it again last night!  (So I could get some pictures, of course!)  ;)

This is delicious on a chilly winter evening!


Seafood Chowder

Ingredients:

1 onion, diced
2 carrots, peeled and diced
4 stalks celery, diced
1 clove garlic, minced
2 potatoes, diced (omit to lower carb content)
1 pound crab meat (I used canned crab)
1 pound shrimp, peeled and chopped into small chunks
1 pound scallops, chopped into small chunks
1 quart chicken stock
1 quart heavy cream
1 teaspoon dill
salt, pepper
butter 

Directions:

If using raw shrimp, boil until it turns pink.  Peel; cut into chunks.  Cut scallops into chunks.  Set aside.




In a large dutch oven, saute onions, carrots, celery, garlic (and scallop pieces, if desired) in butter until onions are transparent.  




Add chicken stock and potatoes, salt, pepper, and dill. Simmer at a soft boil until potatoes are tender.  





Add cream and seafood and let simmer at low heat for about 30 minutes. Serve with rolls, crusty bread, crackers, etc.  Enjoy!  :)
